Made with Pedro Ximénez vinegar. This CAVIAROLI is the first made with vinegar instead of olive oil, but the quality of the shell remains and melts away as fast the olive oil does. To make this pearls a bit different from the classic ones we did them slightly bigger so the vinegar punch is even more intense. The vinegar in this pearls is from a sweet wine cold Pedro Ximénez, the sherry wine. The sweet touch remains along with the acid taste of the vinegar.

CAVIAROLI is a savory explosion of flavor enclosed in a thin and transparent membrane. The caviar-texturized pearls, obtained with the encapsulation technology, break in the mouth allowing diners to enjoy a delicate pure oil portion before mixing with the other ingredients of the dish. Caviaroli is a new way to present and use the oil, so it can be used anywhere you would put crude oil. Before using it flip the jar a couple times in order to enhance the oil aroma. Works well with all kinds of dishes, cold and hot. Its membrane can withstand temperatures up to 60°C so it can be also used in soups and hot creams.
